Here’s a little something we think everyone will enjoy. This is seriously good, with minimal effort (we promise).

No-bake Chocolate Éclair Dessert

Pudding Filling:

2 (3.5 oz.) boxes vanilla instant pudding

3 c. milk

1 (8 oz.) container Cool Whip

1 (14.4 oz) box graham crackers

Chocolate Topping:

1/3 c. unsweetened cocoa powder

1 c. granulated sugar

1/4 c. milk

1/2 c. butter (1 stick)

1 tsp. vanilla extract

Here’s what you do:

  1. Combine dry pudding mix / 3 cups milk; beat well. Stir in Cool Whip.
  2. Place layer of graham crackers in 9×13 dish. Spread 1/2 of pudding mix over crackers.
  3. Repeat with another layer of graham crackers / pudding; top with layer of graham crackers.
  4. In medium-sized saucepan, bring cocoa, sugar, milk to a full rolling boil for 1 minute, stir frequently. Let cool one minute.
  5. Add butter / vanilla; stir until butter is melted.
  6. Pour chocolate mix over top of graham crackers. Spread evenly to completely cover top.
  7. Refrigerate overnight.
